Fermentation and storage
After cooling the barrel is inoculated with yeast. The process of beer fermentation takes place in sterile conditions, in special containers made of the highest quality steel. After one week we obtain so called green beer. Now the times comes for slow, lasting for several weeks, maturation process in cooled storage tanks during which the full taste of beer is developed. Fermentation and storage – i.e. the maturation process – during which secondary fermentation takes place, need time. The process duration depends on individual beer kinds.
